Oreo Mint Cheesecake

3 8 oz pkgs cream cheese
1 cup sugar
1 tsp peppermint extract (I used peppermint essential oil)
1 tsp cornstarch
1/4 cup whipping cream
1 16 oz pkg of Oreos ( you can even use the mint ones!)

Beat the cream cheese on low speed until smooth. Add the sugar, scrape the sides of the bowl to evenly incorporate sugar. Add the vanilla, then the eggs one at a time, scraping the sides of the bowl after each addition. Add the cornstarch. Mix well on low speed. Add the whipping cream, stirring just till combined. Grease an 8inch spring form pan. Cut 1/3 off of enough Oreos to go around the pan, reserving scraps. Coarsely chop the remaining Oreos. Add the chopped Oreos to the batter then add to pan. Bake at 350 for 30 minutes, or until the center is set.
